Santa Fe grilled chicken salad

4 cups torn Romaine lettuce

Grilled chicken breast strips

1 large tomato, chopped

1/4 cup Mexican style shredded cheese

1/4 cup Fat free Ranch dressing

1/4 cup salsa


Toss Romaine lettuce, chicken breast strips and tomatoes in large bowl.  Sprinkle with cheese.  Combine dressing and salsa.  Pour over Romaine mixture, toss to coat.  Serve immediately.


Almond Chicken Salad

1 1/2 cups diced, cooked chicken breast

1 cup halved seedless red grapes

1/4 cup celery, chopped

1/4 cup low fat mayo or Miracle Whip

1 Tbsp slivered almonds

1/2 tsp ground pepper


Combine the chicken, grapes, celery, mayo/Miracle Whip, almonds and pepper in med bowl.  Mix well.
