Ziti with spinach, tomtoes and gorgonzola sauce

4 oz of whole wheat ziti, cooked

1/2 tsp EVOO

1 cup cherry tomatoes, halved

1/4 tsp salt

1/8 tsp crushed red pepper

1 garlic clove, minced

6 Tbsp fat free half and half

3 Tbsp gorgonzola cheese, crumbled

1 cup fresh spinach



Cook pasta according to box.  Heat EVOO in a large skillet over med heat.  Add cherry tomatoes, salt, crushed red pepper and minced garlic to pan.  Cook 1 min stirring occasionally.  Stir in half and half and gorgonzola cheese.  Cook 2 min or until slightly thick, stirring constantly.  Stir in spinach and pasta.  Cook 1 minute or until spinach wilts, tossing occasionally.  Spoon over pasta and serve.
