Whole Wheat Vanilla Pancakes


1/2 cup whole wheat flour

1 Tbsp sugar

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 egg

1/4 cup vanilla yogurt

1/4 cup water

1 Tbsp oil (canola, grape seed or rice bran oil)

1/4 tsp vanilla extract

Directions:

Whisk together the whole wheat flour, sugar, baking powder ans doa and salt in one bowl and make sure there are no lumps.  In another bowl, whisk together the egg, yogurt, water, oil and vanilla.  Combine the wet and dry ingredients and stir until moistened.  Use a very scant 1/4 cup per pancake cooking on a griddle over medium high heat. Cook for 1-2 minutes or until bubbles form and flip, cooking until golden brown.
