Sausage and Cheese Muffins


4 oz turkey sausage or crumbled turkey bacon

5 large eggs

1  cup (4 oz) shredded reduced fat cheddar cheese

1/2 green bell pepper, chopped

1/4 onion, chopped

1 can (12 oz) sliced mushrooms drained

Directions:

Preheat the oven to 350F.  Coat a 6 cup nonstick muffin pan or line with baking cups.  In a medium skillet cook sausage, green pepper and onion on medium-high for 5 minutes or until sausage is no longer pink.  Spoon the mixture into a bowl and cool slightly.  Stir in the eggs, 1/2 cup cheese and mushrooms.  Evenly divide the mixture among the prepared muffin cups.  Sprinkle with the other 1/2 cup cheese.  Bake 20 minutes or until egg is set.
