Peach Melba Breakfast Shortcake
1 frozen whole wheat waffle
1/2 up cottage cheese
1/2 cup Fiber One cereal (your choice)
3 peeled fresh slices or canned peach slices
1/4 cup raspberries
Toast waffle. Top with cottage cheese, cereal and fruit.
1 cup fat free milk
1/2 cup plain yogurt
1/4 tsp vanilla extract
1 1/2 cups fresh or frozen strawberries, thawed
1/4 cup nonfat dr milk powder
4 ice cubes
2 Tbps sugar (don’t you dare!!!) lol
In a blender combine all the ingredients. Cover and process for 30-45 seconds or until smooth. Stir if necessary. Pour into chilled glass and serve.
